1 large eggplant sliced 1/4 in thick
1 medium red onion sliced thin
3 cloves garlic minced
2 large tomatoes sliced into rounds
1 cup chopped asparagus
1 cup frozen spinach
2 cups lowfat cheese,
1/4 cup parmesan cheese,
Jeanpierre’s Season-All to taste.


Layer all ingredients and bake at 350 degrees until golden brown for about 40 minutes.
